Breakfast, lunch, dinner and dessert, the versatile products from the Maple tree make for some mighty tasty recipes. From co*cktails to donuts, from sauces to sushi, the great taste of Maple is a wonderful accompaniment that brings out the best in meats, cakes and beverages.

There are over 128 species of Maple Trees, only one of which appears in the Southern Hemisphere.

Maple syrup is a syrup usually made from the xylem sap of sugar maple (2% sugar), black maple (1% sugar), red maple (1% sugar), silver maple (1% sugar) or the ash leafed maple trees (1% sugar). In cold climates, these trees store starch in their trunks and roots before the winter; the starch is then converted to sugar that rises in the sap in the spring. Cold nights and warm days are required for sap to flow properly from a Maple tree. Maple trees can be tapped by boring holes into their trunks and collecting the exuded sap.

Maple syrup is a product of North America exclusively. Most Maple Syrup comes from Quebec (the largest producer), Vermont, Ontario, New York and Maine. It takes about 42 quarts of sugar maple sap to make approximately 1 quart of maple syrup.

Maple sugar is what remains after the sap of the sugar maple is boiled for longer than is needed to create maple syrup or maple taffy. Maple sugar is approximately 90% sucrose. Maple sugar has been exported for use worldwide since since 1630!
